RECIPE: Mushroom Fontina Quiche..Piece of Pie Please!

It's a brand new day and I've got RECIPE #2 to share with you as LOFT101.net has been celebrating RECIPE WEEK all week long!  I've been cooking and eating and eating and cooking...LOL!!

On Today's Menu is:
 
Mushroom Fontina Quiche
Here's What You Need:
(makes 2 deep dish pies)
You need two packs of 9 oz Fontina Cheese,
2 large packs (16 oz size) of mushrooms (white or bella), 1/2 stick of butter, half and half, whole milk, 8 eggs, 2 shallots, salt, pepper, 2 Deep Dish frozen pie crusts

Preheat oven to 325  degrees to lightly brown your pie crusts

BEFORE
(insert in preheated oven)

AFTER
(12 minutes later-remove from oven)
 
Reset oven to preheat at 450 degrees

Melt 1/2 stick of butter in shallow pan

Chop shallots up in to small pieces
Add shallots to butter to sauté (10 minutes)

Chop mushrooms up and add 6 cups to the shallots and butter

Sauté mushrooms for 12 minutes on low heat

Add eggs to a large bowl

Add a quantity of (2) 2/3 cups of half & half to eggs

Add a quantity of (2) 1/3 cups of whole milk to eggs

Add 1 teaspoon of nutmeg

Whisk everything together really well!

Add 2 cups of grated Fontina Cheese (save remaining 3 oz for topping)


Add mushrooms and shallots to egg mixture and mix well
 
Pour mixture into both pie crusts and cover crusts with foil to avoid additional browning.  Top with remaining cheese. 
Bake for 45 minutes

Superb!! After cook time, remove from oven and let set for 1/2 hour then slice yourself a piece of quiche!  Enjoy!!
